The South American community has arranged the kitchen with two shared
fridges and ovens, a series of pantries for provisions and a large table at the
centre. Mariza, Maria, Ana, Gisela and the other women in the community are in
the kitchen preparing papas alla huancaina, lomo saltado, chicken with rice,
ceviche and other typical dishes.
Gisela, 42 and the mother of Mirko and Bachir, loves cooking not only for her
sons, but for lots of other people, as she did when she worked in a Peruvian
restaurant in Rome. Today at 4Stelle she often organises pollade – big lunches to
raise money for good causes.
